Dinner tonight: nut-encrusted baked yam crisps (not pictured) inspired by Thrive, and crispy “pizzas”:
- Ole X-treme Wellness Spinach & Herb wraps
- Lightly stir-friend veggies: portobello cap, red & orange peppers, red onion, pearl tomatoes, coconut oil, seasoning of choice (I used Trader Joe’s Everyday Seasoning)
- Homemade pesto
- Nutritional yeast
- Daiya (optional)Broil in oven until edges are crispy and tops is melted (if using cheese). Cut into little triangles and devour gleefully!
